Apparently, a ski parkour was present in John Logan's treatment/script of Spectre. But, Craig can't ski, accordingly, so they edited that bit out.

SP lacking a ski bit is one of the prime issues I have with it, though I come up positive on the whole. The entire Austria section from the moment Madeleine is taken screams for a ski chase, but we just get a plane one (maybe because of Dan's injury?).

How cool would it have been if Bond was up on that high mountain, saw that Hinx and his motorcade were going to be taking Madeleine across a road at the bottom of the land mass, and grabbed some skis to race down head first to meet them while also fending off against gun men shooting at him as he blazes down? I mean, come on.
