You've got it! So many pilots already mentioned, but this is the one and only. The clues are as follows:

    1. My skills are impressive
His flying, making a roll in a Bolköw
    2. I ain’t sayin’nothing
    He speaks no lines
    3. I’m definitely not the main attraction here
He isn’t, Sciara and Bond’s fight is
    4. ..Still, my skills make it all work
It’s the fact that he’s flying that makes th fight spectacular
    5. Getting off this way is fitting for the day
Falling to his death on the day of the dead
    6. But only after the other guy
    Sciarra goes first
    7. Carjacking? No, but something similar
Bond throws him out of his helicopter to fly away in it.
    8. Bond uses that device for the exact opposite it’s designed for
Bond hits the pilot with his own helmet on the head.
    9. We do get a lot of attention, don’t we?
    The people in the square
    10. Shoot in.... And out!
Shooting the flare gun, end he’s out
    11. Anyone else wanting to drop out?
He’s trying to get Bond to drop out, instead Sciarra goes, and then him
    12. Flying off into the sunset? Not me…. Sadly.
    That’s Bond, in HIS helicopter.
    13. I’m in time for the fireworks, but it doesn’t help me at all.
He tries to shoot a flare at Bond in the fight.
    14. People in my profession…. Just don’t seem to be very lucky this time ‘round.
He gets thrown out of his helicopter, the one with Blofeld crashes at the end of the film.
    15. …..The same type of transportation, at the start and at the end
Sciarra’s helicopter, and of course at the end Blofeld’s.

I thank you all for taking this flight with me. Over to you @R1s1ngs0n !

    Whisper

    1. When I talk, others listen... - Bond tries hard to hear the 'waiter' speak
    2. ...although no one actually looks at me. - both Bond and Kananga speak to him without looking at him
    3. video - Bond tries to understand what he's saying
    4. GAY ARM - his nickname is 'Jolly', and he's one of Kananga's right-hand men

Wow, that's some Sherlock level dissection you present here and it fits almost perfectly (though Bond and Kananga do acknowledge Whisper's presence with a mere glance).
Unfortunately it's not the character I'm looking for. But that was truly a worthy effort, bravo!
